Corn & peanut salad

Boiled Corn 1/2 cup
Roasted Peanuts 1/3 cup
Tomato 1/2
Cucumber 1/2
Capsicum 1/4
Lemon Juice 2 tbsp
Chaat masala A pinch
Salt A pinch
Coriander leaves A handful (finely chopped)
Recipe

METHOD:

  1. In a bowl, add boiled corn, peanuts, tomato, cucumber, capsicum, lemon juice, chaat masala, salt & mix well.
  2. Serve it in a bowl & garnish it with some coriander leaves.
It's the season of corn and should be included in the meals. Adding peanuts to it gives you a good source of good quality fats and also provides you satiety keeping you fuller for longer.
